Berry Mangolicious Muffins

These muffins were so moist and cakey that I could hardly stand it! They melted in your mouth and were the perfect texture.

Filled with yummy bites of blueberries, strawberries and mangos, every bite was a sweet surprise.

The cinnamon streusel topping tastes like fall. A warm and comforting cinnamon spice! Delightful.

 Berry Mangolicious Muffins

Makes 12 muffins

Inspired by Triple Berry Oat Muffins with Cinnamon Streusel from Eat Live Run

For the muffins

1 cup whole wheat flour

1/2 cup all purpose flour

1/2 cup old fashioned oats

1 and 1/2 tsp baking powder

2 cups mixed frozen berries/fruit

1/2 cup unsweetened applesauce

1 cup sugar

2 flax eggs

1/2 cup almond milk

For the streusel

1 and 1/2 tsp cinnamon

1/2 cup old fashioned oats

2 tbsp flour

1 tbsp brown sugar

2 tbsp coconut oil, at room temp

To make these muffins, start by preheating your oven to 375 and lining a muffin tin with liners.

Then, make the two flax eggs by combining 2 tbsp ground flax seed with 6 tbsp of water, stirring, and placing in the fridge for 10 minutes.

In a large mixing bowl, combine the flour, oats and baking powder, then fold in the fruit.

In a small mixing bowl, whisk together the applesauce, sugar and milk, and then add in the flax seed eggs when ready.

Next, add the wet ingredients to the dry ingredients and stir to combine.

Fill the muffin liners with the muffin mix and then move on to making the streusel!

The streusel is the fun part of this recipe where you add all the ingredients into a small bowl, and combine with your hands! Mix the ingredients until you get a moist, crumbly texture, then sprinkle some streusel over each of the muffins.

Bake in the oven for 13-17 minutes or until an inserted toothpick comes out clean. Enjoy!
