Kale, Cranberry and Kalamata Olive Pasta w/ Feta

Happy New Year!

This year I am looking forward to many things and hope you are too. In 2013 I can’t wait to enjoy beautiful sunsets,

So to start the year off here is a simple, delicious, and healthy meal. Kale, Cranberry and Kalamata Olive Pasta w/ Feta.


The flavors of this dish work incredibly well together and I would make this again in a heartbeat.

IMG_1261Kale, Cranberry and Kalamata Olive Pasta w/ Feta

Serves 2

Recipe inspired by Iowa Girl Eats

1 tbsp olive oil

4 cloves of garlic, minced

1/2 small red onion, diced

1/3 cup dried cranberries

4  handfuls of kale, chopped

2 servings of dry whole wheat rotini pasta

1/3 cup kalamata olives, sliced

Feta cheese

To make this dish, start by cooking the pasta per instructions on box. As the pasta is cooking, heat the olive oil in a skillet over medium heat and sauté the onion and garlic for about 3 minutes.Then add the cranberries and kale and continue sautéing for about 5 minutes or until the kale is tender. Lastly add in the kalamata olives and cook for an additional minute or so until all ingredients are warmed through. Assemble the pasta by tossing the skillet ingredients with the pasta and topping with feta. Enjoy!
