Hi all, welcome to this week’s What I ate Wednesday post. Week number 4! And thanks to Jenn for hosting!
This WIAW consists of all my eats from Tuesday. It was a good day. I started off the day doing some readings for school. Learned about the difference between prevalence and incidence rates from my epidemiology textbook. And along with breakfast I read a chapter in Food Politics. I love this book. Dinner was a glorious temp tac. A taco made with tempeh, kale, corn, bell peppers, onion, a bunch of seasonings, greens and some salsa.

It was about 2/3 cup of homemade almond milk, 1/2 cup of oats, 1 very ripe frozen and sliced banana, about a third of a package of silken tofu, 1 tbsp of peanut butter, 2 tsp of cocoa powder, 1/2 tsp cinnamon, and a dash of maple syrup. Holy wow, this was awesome.
