Roasted Sweet Potato Sandwich

This is going to be a short and sweet post today. Short and sweet for Sunday. A few weeks ago I made a Roasted Sweet Potato Sandwich, and I can’t stop thinking about it! The colors, the flavors, the textures, perfecto!

I really love sandwiches.

Roasted Sweet Potato Sandwich

Serves 1

To make this sandwich, simply roast a sweet potato (cut into 4 wedges) in the oven at 400 degrees for 40 minutes. When cooled, mash the sweet potatoes (minus the skin) in a small bowl with a fork.

Then assemble your sandwich by spreading half of the mashed sweet potatoes on one piece of bread, topping that with spinach, sprouts and fresh tomatoes (or whatever other veggies you have on hand), and finish it off with another slice of bread slathered in dijon mustard. Enjoy!
