Savory Tofu and Veggie Pizza

Today is the last day of school I’ll ever have. Ever. It feels pretty good!


I’ve still got final presentations tonight, but I thought I’d post this delicious pizza recipe before I’m off!


Make this pizza to celebrate something great in your life on this fabulous Monday. You won’t be disappointed!


Savory Tofu and Veggie Pizza

Serves 4

1 whole wheat pre-made pizza dough (or homemade!)

~1 cup of cilantro jalapeño hummus

1 package of Trader Joe’s savory baked tofu

1 and 1/2 cups of frozen kale (or fresh if you’ve got it)

1 cup of bell peppers, chopped

1/2 cup of yellow onion, chopped

1 large pre-baked sweet potato, chopped

To make this pizza start by preheating the oven to the temperature indicated for your pre-made dough.

While the oven is warming, chop your veggies and sauté the kale, bell peppers and onion for about 7-10 minutes, or until tender.

When the oven is ready and your veggies are set, start making your pizza!

First spread the hummus over the pizza crust.

Then layer on the kale, bell pepper and onion mix, the sweet potato and the tofu.

Now bake the pizza according to package directions. Mine took about 13 minutes. Enjoy!
