What I Ate Wednesday #121

Morning! Here we are at the last Wednesday of the month already. I can’t believe that August is right around the corner! I’ve been soaking up the summer as much as possible by being outdoors every chance I get. I’ve loved going for a nice, relaxing walk every evening after work. Such a peaceful way to end the day!


For this What I Ate Wednesday I’m sharing my eats from Monday. I started off with a piece of peanut butter toast and some frozen mango. It was quite delicious!


Midmorning at work I had a plain rice cake, my go to morning snack at the moment.


Lunch was a spinach salad with cannellini beans, sun dried tomatoes, cherry tomatoes, and sesame seeds with olive oil, tahini and stone ground mustard. I’ve been loving having fresh salads at work each day this summer, but I’ve got to start mixing it up with different veggies and toppings!


I also had some red grapes on the side. Crunchy perfection.


That afternoon at work I ate some rice crackers (they are a gluten free brand from Target), and boy were they salty! I could hardly eat them. I need to find a good brand of crackers that aren’t so salty. Any suggestions?


I also finished up half of this Kind bar at work. Maple Pumpkin Seeds with Sea Salt. I liked it, but not sure I would buy it again. I really should try making my own granola bars again!


Dinner was another tasty salad. I have a lot of greens to use up! And when it is so hot I don’t want to turn on the oven and salads do the trick! This was spinach, beans, bell pepper, avocado,  pistachios, avocado oil, and nutritional yeast. It was SO good! This was a new salad combo for me and I will definitely be making it again.


I ended my night with a little chocolate ice cream. This was extremely creamy and practically turned to soup in my warm apartment before I could eat it, but still delicious!

Farmer’s Market Greens and Beans Summer Salad

Morning all! Hope you had  a wonderful weekend and are looking forward to the week ahead. I am excited to visit my sister-in-law’s rooftop farmer’s market this evening, where I’m hoping to find some great produce to use throughout the week!


Until then, I wanted to share with you a recipe for a salad I made with my farmer’s market finds from last week. This salad features swiss chard and mustard greens!


It’s simple to make, full of flavor, and is packed with nutrients as well!


The sautéed greens and garlic pair wonderfully with the smoky BBQ sauce and sun dried tomatoes. Make this for dinner tonight!

Farmer’s Market Greens and Beans Summer Salad

Makes ~4 generous side salads

1 tbsp olive oil

1 tsp garlic (minced)

One bunch of swiss chard

1/2 a bunch of mustard greens

1 can of black beans

1/2 cup of uncooked red quinoa

Sun dried tomatoes

Sesame seeds

Stone ground mustard

BBQ sauce


Salt, pepper and a spice blend


To make this dish start by cooking the quinoa according to package directions. It took me about 12 minutes to fully cook the 1/2 cup of quinoa in one cup of water.

While the quinoa is cooking, sauté the greens and black beans in the olive oil and garlic. Sauté for about 5-7 minutes on medium low heat, stirring occasionally. Towards the end of cooking the greens, stir in a little salt, pepper and a spice blend of choice to taste.

When the quinoa is done, add it to the sauté pan with the greens and beans and continue cooking until everything is warmed through. Maybe another 3 minutes or so on low heat.

For serving the salad add sun dried tomatoes, sesame seeds, stone ground mustard, tahini and/or BBQ sauce on top! Enjoy!

What I Ate Wednesday #120

Hello again! It’s been quite some time since I’ve posted here, but what can I say? Sometimes life just happens! I’ve missed sharing recipes and featured daily eats though, so to start I thought I’d hop back on the WIAW train!


Last weekend on an absolutely perfect summer day I decided to snap pictures of all my eats. Breakfast started with a bowl of puffed brown rice cereal, muesli, a banana, coconut milk, that was drizzled with peanut butter. I didn’t have any chocolate chips on my cereal though, this was a picture of a dessert I had earlier that weekend!


After running some errands that morning, I decided to pack up a lunch and head to the lakefront for a picnic! I love being so close to the lake that I can hop in my car and be outside in such glorious, relaxing scenery in about 15 minutes! For my lunch I packed a classic PB sandwich, some veggie tortilla chips, carrots, and a kombucha.


Although it was overcast at first, the sun came out just as I pulled out my lusciously sweet watermelon.  It got real quick after that!


I had only about 1/3 of my kombucha with lunch, along with some water, so after spending a couple of hours outside reading I was ready for a cold drink. I walked to a coffeehouse near the lake and got an iced chai. It was surprisingly disappointing. Oh well.


That afternoon I wrapped up at the beach and made it back home in time to miss a huge thunderstorm. I stayed in my apartment for a bit but soon enough the skies cleared up and I headed outside again! This time I packed a dinner picnic to bring to a nearby park. I had a delicious salad made from mustard greens and swiss chard that was topped with quinoa, black beans, sun dried tomatoes, sesame seeds, BBQ sauce and tahini. Yum!


I also had some rice crackers and beet hummus. This was my first time trying the TJ’s beet hummus and I really liked it. I’ll have to try and make a homemade version soon!


A few grapes rounded out my meal. So glad to have grapes for the first time this summer! These were perfectly crisp and refreshing.

Before bed I had a handful of dark chocolate chips and watched a few episodes of Friends. I never watched the show when it was on TV, but have loved it on Netflix!
