About a week ago my brother and I set out for a cross-country road trip. We were driving back home to Wisconsin from New Jersey to visit the fam! The night before we left we packed up all the goodies we thought we may need for the journey ahead of us: essentially food and entertainment. I packed up the pretzels, raisins, granola bars, peanut butter sandwiches, chopped veggies with hummus and dark chocolate. And lots of water of course. I also brought reading materials, books and magazines, and my brother hooked us up with all the music we could ever want. We were set for our trip!
And we were off…at 4:35 a.m.
We were both pretty excited to get this show on the road!
Petroleum fill-up number 1.
Five a.m. fuel for him: Clif bar, water and double shot espresso. Thanks for driving the first shift bro!
We made it to Pennsylvania!
As we were driving I ate my passion fruit banana overnight oats. Delish! The night before I prepped my oats so I’d have an easy breakfast for on the road. I mixed 1/2 a cup of oats, about 3/4 cup of almond milk, a tsp of chia seeds, a sliced banana and some passion fruit greek yogurt in my ball jar. Shook it up real nice and let is sit in the fridge overnight. In the morning before we left I added some peanut butter on top, now it was ready for consumption!

My turn to drive! My brother is a tad taller than me…I had to move my seat forward about 5 ft to reach the pedals.
Lunch break. I packed my leftover B-licious Black Bean, Beet and Barley Salad and some carrots.
